2 Ingredient Coco Banana Cookies

2-Ingredient Coconut Banana Cookies

5-6 very ripe Bananas
2 cups finely shredded Coconut (sugar-free)

In a blender, or with a fork, mash or puree bananas until soupy, add coconut until a cookie dough consistency forms. Mold into a small patty (it is ok if it is dry enough to “crack” a little around the edges), you want it sticky enough to hold together but dry enough to leave your hands clean after handling. Place on non-stick (silpat or parchment paper) on a cookie tray and bake at 225 degrees until firm and slightly golden around the edges (approximately 25 minutes – cooking time may vary)

Almond Creme Drizzle

2 tbsp. almond butter

1 tbsp. coconut cream

1 tsp. raw honey

Blend together and drizzle over cookies, finish by sprinkling cookies with Organic Cacao Nibs.
