Crisp, light and refreshing – this simple, yet elegant salad is perfect any occasion.
1 large beet peeled and ends cut off
2 large carrots peeled and ends cut off
1 small to medium jicima root peeled with the ends cut off
1 tbsp. avocado, sesame or olive oil
Juice of ½ lime
I run all the ingredients through my sprializer. It takes all of three minutes and the result is beautiful. You can also simply grate the ingredients and toss them on a plate like beautiful confetti. Drizzle with oil and lime juice and savor this sweet, tangy and nutritious salad.
