Zesty Gazpacho Soup


This cold gazpacho is a real crowd pleaser, perfect for a hot summer night and chock full of veggie goodness.

Zesty Gazpacho Soup:

4 large ripe tomatoes skinned and chopped

1 cucumber peeled and chopped

1/4 chopped green pepper

1/4 cup chopped onion

1 small hot red pepper chopped

1 tablespoon olive oil

2 teaspoon red wine vinegar

1 teaspoon sea salt Black pepper to taste

1 clove garlic crushed

Fresh lime juice

Combine all ingredients, let chill for an hour in the fridge, and serve. Easy and delicious!
