Coco-Berry Pops

cocoberryThese delicious and decadent little pops are perfect for Summer. With fresh organic berries available, these are the perfect way to satisfy that cool, creamy, sweet craving.


Coco-Berry Pops


1 cup expeller-pressed (refined) coconut oil

1 cup fresh berries, such as raspberries, blueberries, pomegranates, cherries and strawberries

10-14 drops SweetLeaf “French Vanilla” flavored stevia (to taste)

Gently melt coconut oil on the stove. While the oil is melting, briefly process the fruit in a blender or food processor so it’s chopped up into small pieces. Add the stevia.

Pour the melted coconut oil into your blender or food processor and process to mix with the fruit and other ingredients. Continue mixing until all of the fruit is smoothly blended into the oil.

The mixture should now be a thick blended consistency.

Scoop finished mixture into ice cube trays or simply drop spoonfuls on a parchment paper-lined surface such as a cookie sheet.

Put molds or parchment paper-lined surface into the freezer to firm up the candies. After half an hour or so, or whenever they have become solid, remove from the trays/parchment paper and store in a container in your freezer.

Enjoy as a sweet treat, or drop into smoothies, and reap all the benefits of that decadent coconut oil.

When it is present in the body, lauric acid is converted into monolaurin, a compound that is highly toxic to viruses, bacteria, funguses and  other microorganisms because of its ability to disrupt their lipid membranes and  virtually destroy them.
