Thai Spiced Noodles

Ingredients

For the Sauce:

  • 1/2 cup cashews or macadamia nuts
  • 1/2 avocado
  • 1 jar of roasted red peppers
  • 1 tsp. himalayan salt
  • 1 clove garlic
  • 1 tbsp. red chili flakes
  • cracked black pepper
  • 1/4 cup coconut milk
  • dash of cayenne (optional)

Blend sauce ingredients in a high speed blender, set aside.

  • 1 zucchini sliced thin
  • 1 cup snow peas
  • 1 carrot sliced thin
  •  4-5 asparagus spears chopped

For noodles

  • 1 bag of kelp noodles (no cooking required) or prepared rice noodles

Toss all ingredients into a saucepan and heat through. Serves 4.
